Standing still holds little interest for us. We love to experiment, are always learning and busy ourselves with everything that makes flavour better: good bread, ferments, herbs, old techniques or new ideas from the kitchen. What always stays the same: we want to turn really good products into honest food that people enjoy eating – and remember. Many things we still do ourselves. We bake bread, ferment vegetables, gather herbs and often process meat whole. Not because it should sound special – but because it makes complete sense to us. And because you can taste the difference.

The longer we run the Gellnwirt, the clearer it becomes: in the end, everything revolves around the kitchen. Around good food. Around flavour. And around people enjoying sitting together. An inn used to be simple and uncomplicated. That's exactly what we still love today. But we also believe that inn cuisine can at the same time be curious, precise and really good.

This is why we work the way we do:

  • We often buy meat whole and process it ourselves
  • Baking bread and fermenting are part of everyday life
  • We gather herbs and woodland essences ourselves
  • We work closely with producers from the surrounding area
  • Our kitchen changes with the seasons, our ideas and the flavour

We refine, process, taste, develop – open, creative, steady. That's how the inn cuisine the Gellnwirt stands for comes about. The kind that does you good and that you enjoy.

Much at the Gellnwirt comes from curiosity. For example our kombucha, which Verena brews herself. Or new ferments, sourdoughs and ideas that eventually find their way onto the plate or into the glass. Not everything has to be perfect. But it should stay exciting.

From kombucha to sourdough – much of it is made in-house

This is how new flavours, new techniques and new ways of refining regional products keep arising with us. An example? Our Gellnwirt kombucha. Verena brews it herself – in our small microbrewery. Started, nurtured, bottled and labelled by hand. Pure handcraft, pure flavour and a good measure of thirst for knowledge.

At the Gellnwirt we love things that don't have to be loud. Fresh bread in the morning. A full regulars' table. Guests who stay longer than planned. Or the aroma from the kitchen just before service. The tree in the garden

The 150-year-old chestnut tree is our landmark. It gives shade, cools in summer, is home to birds and brings us plenty of work in autumn – and plenty of joy. When you describe the Gellnwirt, you say: “The house on the market square with the tree.” We love the chestnut tree.
